This five-ingredient recipe is my go-to when I don’t have a lot of time to prepare for a potluck or party. Or if I’m feeling downright lazy (every day but Tuesday and Friday). It takes all of 15 minutes, and everyone always ravishes it. I recently went to a Mexican-themed work party, where the food was extraordinarily authentic. There were hand-made tortillas, Birria (Mexican goat stew), homemade salsas with imported Pueblo peppers, Pork Carnitas, and a very spicy Pazole. Yet, all of my could-have-been-chef colleagues wanted the easy-peazy dip recipe.
If you’re like me, you could live on a snack of Gaudy Guacamole and fresh salsa – especially when camping. Well, this completes the spread, and makes it a terrific trio. Nowadays, I keep most of these ingredients on hand, because who knows when the Three Caballeros might stop by.
For a keto version, serve with veggies or Pork Skins instead of Fritos.
La Princesa Flojo (The Lazy Princess) Dip
Ingredients
- 8 oz cream cheese Philadelphia brand
- 2 tbsp butter
- 2 tbsp fresh garlic I use garlic in jar
- 4.5 oz can green chilies, chopped
- 1 med tomato
- 1 bag Fritos corn chips
Instructions
- Saute onion and garlic in butter over medium high heat until onions are translucent.
- Stir in chilies and cream cheese. Reduce heat to medium low, and stir until cream cheese is melted.
- Chop tomato, removing seeds and drain. Stir into warm dip and serve with Fritos.
