Wilderness Skillet with Fried EggsThis Wilderness Skillet is man food to the max, and something that DH Captain Bacon loves to cook for a hearty breakfast before a 12-mile bike ride at The Fort.  And while there’s no bacon, there’s plenty of smoked sausage. But we’re not gonna call him Captain Sausage, because what would people think? Now, a princess can manage perfectly fine without the sausage part (of the recipe) and still have a damn good vegetarian morning. This is one of those foods that truly has the effect of making families happy. And nice to one another, too. No matter what was said the night before, after you succumbed to the temptation to indulge in extra magic hours. This meal is gonna make everything okay again. 

The flavor is wonderful and simple. Remember, more ingredients does not mean a better dish. For this one, presentation is key. It’s important to use tri-color potatoes for the full enchanted visual delight.

ingredients

1 28 oz. bag tri-color potatoes, preferably Mickey shaped ones
1 package of smoked sausage
1 yellow onion
4 eggs
4 T butter, unsalted
3 T olive oil
garlic salt
pepper
Frank’s Red Hot Sauce

directions

Preheat oven to 400 degrees. Chop potatoes into quarters. Chop onions. Melt 1 tablespoon of the butter with 1 tablespoon olive oil, and cook onions on medium low heat until translucent.

Toss the potatoes in the remaining oil, and sprinkle with garlic sat and pepper. Place potatoes on pan, and cook in preheated oven for about 10-15 minutes. Note: Alternatively, potatoes and oil mixture can be double-wrapped in foil and cooked on grill for about 30 minutes (flipping occasionally).

Next, cut sausage into bite-sized chunks, and set aside. Remove potatoes from oven and add to the skillet with onions. Add remaining butter and sausage to skillet, stirring to prevent sticking. Cook until sausage is desired color.

In non-stick pan, cook eggs to desired style, and place on top of potato-sausage mixture. Top with Hot Sauce.
