Dry uncooked pork, rub oil, and sprinkle with salt and pepper on all sides.
Cover with foil and place in pre-heated 350-degree oven for pork tenderloin - or 300 degrees if using pork shoulder. Alterantively, use your favorite crockpot method for cooking the pork.
For pork tenderloin, bake about one hour until pork is not longer pink in the middle or registers 160 degrees on a meat thermometer. If using a larger roast (shoulder, rump), cook for 3 hours at 300 degrees.
Remove pork from oven and let rest for at least 15 minutes.
Cut into thin slices and set aside.
